Very Berry Chocolate Cake from Dixi

Cake
3 ozs unsweetened chocolate
1/2 cup water
1 cup sour cream
1 2/3 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
2/3 cup margarine or butter
2/3 cup firmly packed brown sugar
1 cup granulated sugar
3 eggs
2 teaspoons vanilla

Melt chocolate in water until smooth. Cool. Then stir in sour cream. Mix flour, baking powder, soda and salt. Cream butter. Gradually beat in sugars. Beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Alternately add flour and chocolate mixture, beating well after each addition and until smooth. Stir in vanilla. Pour into 2 well greased and floured 9 inch pans. Bake at 350°F for 35 to 40 minutes or until tester comes out clean. Cool in pans for 10 minutes. Remove from pans and finish cooling on racks.

1 quart fresh strawberries
2 tablespoons sugar
1 teaspoon vanilla
1 3/4 cups heavy cream
3 tablespoons sugar
3/4 teaspoon vanilla.

Glaze
3 ozs semi sweet chocolate
3 tablespoons water
1 tablespoon butter or margarine
1 cup sifted powdered sugar
dash salt
1/2 teaspoon vanilla
Melt chocolate, water and butter until smooth. Gradullay add sugar and salt. If too thick add small amount of hot water. Set aside five large strawberries for garnish. Hull and halve the remaining strawberries. Add sugar and teaspoon vanilla, mix gently. Whip cream with sugar and vanilla. Place one layer of cake on serving plate. Spoon on half of the strawberries. Drizzle with half of the glaze and half of the whipped cream. Repeat. Garnish with chocolate dipped strawberries.



Beverage: Disneyland Mint Julep

Disneyland Mint Julep from Dixi

1 cup sugar
3 teaspoons lime juice concentrate
3 cups soda water
6 tablespoons Creme De Menthe
6 oz thawed lemonade concentrate
lemon to garnish


Dissolve sugar into soda water. Add lime juice and lemonade and bring to boil. Remove from heat and add Creme DeMenthe. Chill. To serve, combine 3 parts syrup to 5 parts water and decorate with lemon.
