
Old-Fashioned Carrot Cake from SueW
2 cups flour
2 teaspoons baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
4 eggs
1 1/2 cups sugar
1 1/2 cups oil
2 cups raw grated carrots
1 small can pineapple, drained
1 cup raisins
1/2 cup chopped walnuts
Sift together dry ingredients. Beat eggs, add sugar and oil and mix well.
Combine mixtures together and blend well. Add carrots, pineapple, raisins,
and nuts. Blend well. Put in 3 - 9" layer cake pans, that have been
greased and floured. Bake at 350°F for 35-40 minutes. Cool real well
and frost with Cream Cheese Frosting.
Cream
Cheese Frosting
1 8
ounce package cream cheese
1 stick butter
1 pound confectioners' sugar
2 teaspoons vanilla
Blend
cream cheese and butter together. Add sugar and vanilla and beat until
smooth. To thin, use milk to desired consistency.
Beverage: Champagne Punch

2 1/4 cups and 1 tablespoon orange sherbet
4 1/2 cups fresh orange juice
5/8 (2 l) bottle ginger ale, chilled
1 1/8 (750 ml) bottles champagne, chilled
Place the orange juice, ginger ale, and champagne in the refrigerator
to get them well chilled. In a large punch bowl, place the block of sherbet
in the center and pour the orange juice over the top. Next, pour the ginger
ale over the sherbet. Finally, pour both bottles of champagne over the
sherbet. Stir gently to mix the liquids, resulting in a foamy top. Serve
immediately.
Perfectly Pink Punch
2 46 ounce bottles cran-raspberry juice
32 ounces pina colada mix
2 liters raspberry ginger ale
12 ounces frozen or fresh raspberries
Mix
together the cran-raspberry juice and pina colada mix in a large freezer
proof container. Freeze overnight or up to 1 month. Remove from the freezer
half an hour before serving. Place the frozen mixture in a large punch
bowl. Add the ginger ale and raspberries. Makes 20 servings.
Note: For an alcoholic punch, add 12 ounces of vodka with the raspberry
ginger ale. Regular ginger ale can be used in place of the raspberry ginger
ale if desired.
